Simple Meals

Getting as many greens as I can into my day is a favorite way to keep my energy up throughout the day.  A greens pesto is not only delicious but it’s basically a salad in pesto form- easy to store in the fridge and enjoy throughout the week.  You can also thin this recipe further for a salad dressing, or combine it with a basic hummus recipe to create a green hummus to dip veggies into.

 

Greens Pesto on Sprouted Tortilla Pizzas

Ingredients
3 cups washed and cleaned assorted greens (kale, dandelion, fresh green herbs)
1/2 cup walnuts
3 cloves garlic
1 teaspoon sea salt
⅓ cup vegan parmesan cheese (can use hummus)
zest and juice of half a lemon
1/2-3/4 cup vegan milk until a pesto consistency reached
Combine all ingredients in a food processor until creamy and smooth.  Spread on a Sprouted or GF Tortilla, and top with desired pizza toppings.  Bake 350 degrees until toasted.  Enjoy!
