It was a hot day today, and a cooling soup sounded perfect. This soup is raw, vegan, nourishing and satisfying. I enjoyed it alongside cut up cantaloup and grilled tofu burger. A perfect lunch on an abnormally hot pre-spring day!
Whole foods needed:
1/4 green cabbage, raw & organic
1 cup Italian parsley or other fresh herb, organic
1/3 cup salsa
1/2 apple or pear
1 cup water,
1/2 lemon squeezed
Blend well. This will form a creamy soup that you can enjoy as is- the salsa provides the savory taste, and the apple gives the perfect hint of sweetness! This is great with toasted Ezekiel bread & coconut oil.
