Make: Coconut Lavender Steamer Cakes (vegan, sugar-free, gluten-free)

These have just a hint of sweetness, and make you feel warm & cozy inside alongside a nice cup of decaf espresso (or hot tea).  The scent of lavender having a calming effect & the cakes are perfectly moist from being steamed in the bamboo baskets.

Coconut Lavender Steamer Cakes (vegan, sugar-free, gluten-free)

You’ll need:

¾ cup organic coconut flour
1 cup gluten free flour mix (I like Pamela’s)
1 tsp baking powder

1/2 cup rice milk (or almond milk)
¼ tsp salt
1 tbsp coconut oil
1 tsp vanilla extract

1-2 tbsp lavender buds (+ more to decorate each ball)
1/3 cup organic applesauce

organic coconut flakes (unsweetened to roll in before steaming)

Method:  mix dry and wet together.  *add water as needed to get the batter just fluffy enough to handle with hands (but not too thick, as the increased water will create a lighter cake)*.  Roll each ball in coconut with hands and place in mini muffin paper.  press extra lavender buds lightly into the center of each cake.

Steam for about 10-15 minutes in bamboo steamer.  Let cool.  Enjoy!
